Sous Chef - Western Cuisine

Job Title: Italian Sous Chef

Location: Maldives

 

I'm currently supporting an incredible hospitality group, based over in the Maldives, with their search for an ambitious Sous Chef. 

 

The group are one of the leading hospitality groups, both globally and across the Maldives, boasting an incredible portfolio of luxury properties across the islands.

 

The role will be reporting to the wider Exec Chef, and in short the Sous Chef will uphold the Head Chef’s culinary vision for the restaurant with an eye for quality, taste, and presentation.

This person will also be responsible for the Head Chef’s responsibilities in the event of their absence.

In doing so, the Sous Chef is able to provide kitchen staff with consistently strong direction, so they can elevate our menu to the highest dining experience possible.

 

We are looking for those who have successfully overseen high-end/fine dining BOH operations within 5

* luxury/boutique properties in the past, and prior luxury/remote island experience will of course be preferred too. 

 

What you'll be doing:


  • Help in the preparation and design of all food menus.
  • Produce high quality plates both design and taste wise.
  • Ensure that the kitchen operates in a timely way that meets our quality standards.
  • Fill in for the ExecutiveChef in planning and directing food preparation when necessary.
  • Resourcefully solve any issues that arise and seize control of any problematic situation.
  • Manage and train kitchen staff, establish working schedule and assess staff’s performance.
  • Order supplies to stock inventory appropriately.
  • Comply with and enforce sanitation regulations and safety standards.
  • Maintain a positive and professional approach with coworkers and customers.
