Job Role: Junior Sous Chef Pastry
Cuisine: Modern bistro & 3-Rosette tasting menu (seasonal/foraged focus)
Location: Scotland (live-in cottages available)
We’re partnering with this prestigious hotel, as it embarks on a major refurbishment—including two new restaurants and a 16-cover tasting-menu venue.
This is a rare chance to join a team shaping the future of high-end, garden-to-table dining.
The Hotel & Kitchens:
- Two distinct concepts: Relaxed fine-dining bistro + exclusive 3-Rosette tasting menu (foraged/garden-led)
- Team: Focus on upskilling and full training
- Produce: In-house bread/butter, fermentation/preserves, wild, local ingredients
The Ideal Junior Sous:
- Experience in fine dining/hotels (1+ year in current role preferred)
- Passion for seasonal produce, foraging, or fermentation
- Strong section skills (any station considered)
- Team player ready for a high-growth environment
