Key Responsibilities
- Execute traditional edomae nigiri with precision and consistency
- Perform Japanese fish breakdown and preparation to a high standard
- Maintain a meticulously clean and organized workstation
- Engage guests professionally in a chef’s counter setting
- Uphold the standards of a calm, focused, fine dining service
Qualifications
- 3+ years in the hospitality industry, preferably in a notable sushi or fine dining restaurant
- Strong foundation in nigiri technique and sushi fundamentals
- Japanese fish butchery experience preferred
- Fine dining and chef’s counter experience strongly preferred
- Sake knowledge is a plus but not required
