Job Title: Head chef - Luxury hotel
Location: Rotterdam, Netehrlands 
Salary: €40,000 - €48,000 gross per annum

A new luxury hospitality property in Rotterdam is preparing for its launch and is seeking an Executive Chef to lead its kitchen operations from the ground up.

The culinary concept will be centered around Mediterranean cuisine with a modern interpretation, delivered within a high-end hotel environment.

This is a key leadership position within the opening team, responsible for defining the kitchen identity, building the brigade, and setting operational standards ahead of opening and beyond.

Key Responsibilities

• Lead the full setup and launch of hotel kitchen operations, including all food outlets.
• Design and implement a Mediterranean-inspired menu aligned with a luxury hotel dining experience.
• Ensure consistent quality, presentation, and service across breakfast, à la carte, and event offerings.
• Oversee purchasing, supplier management, inventory control, and food cost optimisation.
• Implement and maintain strict hygiene, HACCP, and food safety standards.
• Recruit, train, and lead the kitchen team as part of the hotel pre-opening.
• Work closely with Food & Beverage and hotel leadership to ensure seamless guest experience.
• Drive menu innovation, seasonal updates, and concept development.
• Monitor kitchen performance, staffing, and operational efficiency.

Candidate Profile

• Proven experience as Executive Chef, Head Chef, or Senior Sous Chef in 4- or 5-star hotels or comparable upscale hospitality environments.
• Strong background in Mediterranean cuisine; Spanish culinary experience is highly desirable.
• Previous experience in hotel openings or pre-opening projects is a strong advantage.
• Confident and structured leader with experience managing kitchen teams in a hotel setting.
• Strong understanding of hotel food operations, cost control, and multi-outlet service.
• Passion for high-quality cuisine, guest satisfaction, and team development.
• Ability to work effectively in a fast-paced pre-opening environment.
