Head Chef - High-Volume Branded Restaurant - Brighton 50-56k

Lead a brigade of 20 in one of Brighton's busiest restaurants, with a fresh, made-from-scratch menu and a national group behind you.

COREcruitment is partnering with a leading UK restaurant group to appoint an experienced Head Chef for its high-volume Brighton restaurant, in the heart of the city centre.

This is a Head Chef role for a proven leader who loves busy services, big teams and running a tight, well-organised kitchen.

You will have the support of a local Executive Chef and Area Chef, and the backing of a group entering a new phase of growth.

The Head Chef role

• Lead, manage and develop a brigade of 18-22 chefs, including Sous Chefs, section chefs and prep chefs
• Run the pass on busy services of 200-400 covers, setting the pace and the standard
• Own stock control, ordering and inventory, and manage food cost and labour to budget
• Keep fresh, made-from-scratch dishes consistent to brand spec, every service
• Work alongside the General Manager to deliver the highest food safety standards
• Train and develop your team, supporting the existing Sous Chefs on their progression plan
• Use the group's systems confidently: kitchen display screens, rota, stock and audit platforms

About you

• An established Head Chef, not a Sous Chef stepping up
• High-volume branded or casual dining background, running 200+ cover services
• Experience managing a brigade of 15 or more chefs
• Strong on stock, ordering, GP and inventory management
• Comfortable running the pass and leading from the front
• A people-first Head Chef who builds a positive, accountable kitchen culture
• Based in or within easy reach of Brighton

The package

• 50-56k total package: 41k basic plus tronc, estimated at c.9k, plus a quarterly bonus of up to 6k
