Head Baker - Artisan Bakery - Central London 50-55k plus tronc

Lead a 12-strong from-scratch production team at one of London's most respected artisan bakeries, with real ownership of product development.

COREcruitment is partnering with a highly regarded London artisan bakery group to appoint a Head Baker.

The Head Baker will lead the central production kitchen that supplies the group's sites and wholesale customers, with everything made from scratch.

The Head Baker role

• Lead, train and develop a production team of 12 across bread, viennoiserie and preparation
• Own quality and consistency on everything made from scratch, from fermentation and lamination to shaping and baking
• Plan production, staffing and workflow for retail and wholesale demand, keeping waste and labour tight
• Lead product development, bringing new ideas to regular tastings with the senior team
• Maintain exemplary hygiene, food safety and allergen standards
• Set the standard for quality as the business opens further sites

About you

• An experienced Head Baker, or a Senior or Assistant Head Baker ready to step up
• A strong artisan background: sourdough, long fermentation, lamination and viennoiserie
• Experience leading a bakery team in a quality-driven, high-volume production environment
• Commercially aware on yields, waste and labour
• A hands-on coach who leads from the front on early starts
• Full right to work in the UK preferred

The package

• 50-55k basic plus tronc
• 45-hour week with early starts (03:30), finishing early afternoon
• Open seven days a week, closed Christmas Day
• Real ownership of new product development and the range
• Head Baker progression as the business grows, with new sites planned for next year
