Head Chef – Trattoria Restaurant

Location: Malta

Cuisine: Classic and traditional Italian

Salary: €40,000 - €45,000 gross per annum

Job Summary

As the Head Chef, you will lead the operation and management of the kitchen.

This is an Italian restaurant offering classic traditional cuisine in a simple and comfortable manner.

Responsibilities


  • Responsible for the day-to-day running of the kitchen.
  • Leading a team of 5 chefs
  • Shift and rota management
  • Stock controls, ordering, quality control
  • Management of budget, cost control and margin
  • Recruitment and training of the kitchen team
  • Ensure full compliance with food safety, hygiene and security regulations

Personnel


  • Experience of Chef de Cuisine / Head Chef
  • Must have classic Italian Cuisine experience ‘trattoria’ style
  • Current or recent experience in Italy preferred
  • Culinary training / diploma
  • Certification on HACCP standards and other food hygiene rules
  • Passionate about your job
  • Ability to manage costs, negotiate and build relationships with suppliers
  • Experience managing, working with and mentoring a young and dynamic team
  • Positive and motivated attitude
  • English speaking

You must have a solid understanding of kitchen work practices and regulations; including finance and back office functions.

As head chef, you will oversee all inventory, rotas, ordering and staff management, etc.
