Premium hospitality operator in the Mediterranean

€40,000 - €60,000 per annum

 

We are working with this fantastic group for a position in their premium all-inclusive resorts in Malta.

With around 10 restaurants and bars outlets as well as multiple event spaces, they are serving around 3,000 guests per day in the high season.

Working from the Central Kitchen, you will be responsible for


  • the production of currently around 80 products,
  • recipe development to be rolled out across the outlets,
  • ensuring quality and implementation of the brand standards,
  • staff assessments, training & mentoring; etc.

Requirements:


  • Must have a Culinary or Hospitality related degree and education
  • A minimum of 3-5 years’ experience as an Executive Pastry Chef on a large cruise ship or multi-venue, high volume, luxury hotel or resort is mandatory
  • Advanced knowledge of Classical European & International Cuisine, including cooking philosophies & principles
  • Must have strong and effective leadership skills, with the ability to lead a culturally diverse and dynamic working environment
  • Food hygiene, quality and safety certification
  • Strong consistency and who has very high standards.
  • Is able to manage a multi-cultural brigade of more than 30 chefs
  • Is fully responsible for the financial control of the department
  • Hands-on and loves to lead from the front and by example
