Head Chef – Peruvian Restaurant – Shoreditch – 70-75k

A rare opportunity to lead the kitchen of a renowned, vibrant Peruvian restaurant in the heart of Shoreditch.

We are recruiting a Head Chef for a celebrated Peruvian restaurant in Shoreditch.

This Head Chef role is at the heart of a dynamic, open-kitchen operation famed for its charcoal and robata grill.

The successful Head Chef will inherit a talented team and a menu of vibrant sharing plates, with the creative freedom to evolve the offering seasonally.

The Restaurant:

• A flagship restaurant within a globally recognised hotel group.
• Authentic Peruvian cuisine with a modern, sharing-plates concept.
• Open kitchen featuring a charcoal grill and robata.
• Strong seasonal trade with a large terrace for summer.

The Head Chef Role:

• Full operational and financial control of the kitchen.
• Lead, mentor, and develop a brigade of 6-7 chefs.
• Drive menu development and seasonal changes
• Manage all ordering, stock, and kitchen administration.
• Work closely with the GM to ensure a seamless guest experience.
• Ensure consistently high standards across lunch and dinner service.

The Ideal Head Chef:

• Proven Head Chef or strong Senior Sous Chef experience in a high-quality, relevant environment.
• A passion for and understanding of Peruvian cuisine or relevant high-end grill/robata cooking.
• A natural leader with excellent people development skills.
• Commercially astute, with experience in kitchen management and cost control.
• Creative, collaborative, and driven to maintain and elevate standards.
• Ready for an immediate start to facilitate a smooth handover.
