A fantastic opportunity for a Senior Sous Chef to join a renowned Italian-inspired restaurant in East London, with a focus on whole-animal butchery, hand-rolled pasta, and wood-fired cooking.

The Role
We are seeking a Senior Sous Chef to join the team at a renowned Italian-inspired restaurant in Shoreditch.

This is a high-volume, quality-led operation with a focus on people and process – not super creativity.

The successful candidate will support the Head Chef in leading a brigade of 30 chefs, managing service lunch and dinner, and delivering exceptional food quality and consistency.

The Restaurant

• Nose-to-tail Italian-inspired restaurant
• High volume quality services.
• Brigade of 30 chefs.
• All fish butchered in-house, pasta made in-house, cheese made in-house.

The Senior Sous Chef Role

• Support the Head Chef in leading the kitchen team of 30 chefs.
• Drive consistency, food quality, and service standards.
• Manage ordering, stock control, food safety, and compliance.
• Train, mentor, and develop the kitchen team.
• Step up and run the kitchen in the Head Chef's absence.
• Work closely with the Head Chef on operational delivery.

The Ideal Senior Sous Chef

• Proven experience as a Senior Sous Chef in a high-volume, quality-led restaurant.
• Italian cuisine experience is highly desirable – product or process focused.
• Strong leadership and people management skills.
• Calm, organised, and thrives in a fast-paced environment.
• Commercially aware with good financial acumen.
• Available for an immediate start
