And now, they are bringing that energy to the heart of Brussels.

I am looking for an F&B Director who doesn’t just manage outlets — you create destinations.

You’re part operator, part impresario, part strategist.

You live for the buzz of a packed terrace, the thrill of a perfectly timed service, and the magic of a night that turns into a story people tell for years.

THE ROLE

As F&B Director, you’ll partner with the General Manager, Ownership, and our Regional European team to lead the critical path and pre-opening period for all F&B outlets.

You’ll ensure the project runs to schedule, pre-opening budgets are managed, and the property launches with impact.

This is a pivotal senior executive role.

You’ll drive strategic commercial decisions across all areas of F&B to maintain optimum productivity and profit.

You’ll play an active part in:

• Annual Hotel Budget and F&B Forecasts/Re-forecasts
• Annual F&B Marketing Plan
• Annual Capital Expenditure Plan
• Strategic objective setting and cascading the ‘big picture’ to the team

THE OUTLETS

Expansive restaurants (150 covers each, indoor and outdoor) on the ground floor and rooftop, plus lobby lounge bar, event spaces and 24-hour In-Room Dining.

This is a hands-on role where you’ll turn your hand to anything — from concept development to nightly service, from supplier negotiations to hosting the legendary parties.

WHAT YOU’LL DO

• Lead pre-opening strategy, critical path planning, and on-time delivery for all F&B outlets
• Own F&B revenue generation, labour productivity, and cost control in line with pre-opening and operating budgets
• Develop new F&B concepts, take an active role in hotel programming, nightlife and events, and build partnerships to support revenue across all areas
• Maintain meticulous standards — every outlet staged to optimise guest experience
• Host our guests: from daily meet-and-greets with regulars to our many parties and events
• Work closely with HR to ensure effective communication, strong teamwork, and a team that embodies our culture and values
• Lead, motivate and coach a large, diverse F&B team — calm under pressure, always

ESSENTIAL EXPERIENCE

• Minimum 3+ years as F&B Director or F&B Manager in a similar Lifestyle Hotel or large 4- or 5-star Hotel in Brussels
• Strong operator with a solid F&B background — pragmatic and creative
• Keen eye for detail; you never miss a thing
• Natural team leader who remains calm in challenging situations

BONUS POINTS IF YOU HAVE…

• Pre-opening hotel experience with strong project management skills
• Deep understanding of the Brussels hotel, restaurant and bar scene, competitors, local business requirements, and the local labour market
• Background in a high-volume property with a complex multi-outlet F&B operation
• Experience developing and managing a busy nightlife operation
• Excellent commercial understanding — combined with imaginative blue-sky thinking to create an exciting culinary destination
• Track record managing the full end-to-end budgeting process with strong commercial acumen
• Familiarity with the arts, music, and entertainment industries in Brussels
• Experience leading and managing a large team across multiple senior management disciplines
• Flexible approach to working hours, including late nights for our regular nightlife programme and parties
