Senior Sous Chef
Job Title: Senior Sous Chef – Luxury Island Restaurant
Location: Vlieland, Netherlands
Salary: €2,500 – €4,000 gross per annum
We are looking for a Senior Sous Chef to join a high-end destination restaurant located on one of the Netherlands’ most prestigious islands.
The restaurant is consistently ranked among the top dining experiences in the country and is known for its refined, French-inspired cuisine with a strong focus on seasonal ingredients, premium fish and meat dishes, and elevated comfort food.
The operation runs in a strong seasonal rhythm, with peak service from Easter through September, serving a high-volume international and Dutch clientele in a fast-paced environment.
Responsibilities
- Support the Executive Chef in daily kitchen operations and leadership
- Ensure consistent execution of dishes to the highest quality standards
- Oversee and train kitchen brigades during service and prep
- Maintain structure, discipline, and efficiency within the kitchen
- Contribute to menu development and seasonal changes
- Uphold strict hygiene, safety, and operational standards
- Assist in cost control, stock management, and waste reduction
- Lead by example during high-pressure, high-volume services
- Ensure smooth coordination between all kitchen sections
Ideal Candidate
- Proven experience in high-level or fine dining kitchen environments
- Strong leadership skills with a hands-on approach
- Calm, structured, and highly reliable under pressure
- Passionate about quality, consistency, and seasonal cuisine
- Able to adapt to a seasonal, island-based lifestyle and pace
- Strong team player with excellent communication skills
- Understanding of or willingness to adapt to Dutch hospitality culture
- Previous experience in high-volume operations is a strong plus
- Based in or willing to relocate to the island
- Proficient in Dutch is a must
