Sous Chef - Premium British Restaurant - City of London 45-50k

An award-winning, produce-led British kitchen on the edge of the City is looking for a hands-on Sous Chef to drive a menu that changes every day.

The role

• The Sous Chef will lead the brigade alongside the Head Chef across a busy seven-day operation
• Deliver a daily changing menu built around seasonal British produce, wild food and some of the best suppliers in the UK
• Hands-on with butchery, braising, curing and classic British cooking, from snacks and small plates to aged steaks
• Run the kitchen in the Head Chef's absence, covering ordering, stock, rotas and food cost
• Train and develop CDPs and junior chefs, keeping standards consistent on every cover
• Own food safety, allergen control and kitchen compliance

About you

• An established Sous Chef, or a strong Junior Sous Chef ready to step up, from quality British, gastro or premium restaurant kitchens
• Confident with seasonal butchery and whole cuts; game experience a real plus
• A calm, organised Sous Chef who leads from the front during busy services
• Commercially aware, with a good grip on GP, waste and labour
• Stable career history and full flexibility across a seven-day rota
