Senior Sous Chef - High-Volume Pan Asian Restaurant - East London 55k

A Senior Sous Chef role running a high-volume Pan Asian kitchen alongside the Head Chef, with an immediate start available.

COREcruitment is partnering with an established premium restaurant group on the search for a Senior Sous Chef for its high-volume Pan Asian restaurant in East London.

The Senior Sous Chef will be the Head Chef's right hand, running busy services to spec and leading the team day to day.

The client is looking for a Senior Sous Chef who can start within two weeks.

The Senior Sous Chef role

• Act as the Head Chef's right hand in running a high-volume kitchen
• Run the kitchen in the Head Chef's absence
• Lead services of up to 600 covers a day, across à la carte and private dining
• Make sure every dish goes out to group specs, with consistent standards on every service
• Manage and develop the junior team, including Chefs de Partie and Commis
• Train the brigade on dishes, specs, food safety and kitchen standards
• Own ordering, stock control, rotas and food safety compliance
• Support the Head Chef on GP, labour and monthly performance targets

About you

• Senior Sous Chef or experienced Sous Chef background in a premium, high-volume restaurant
• Pan Asian, Japanese or Southeast Asian kitchen experience strongly preferred
• Wok, robata grill or live-fire experience an advantage
• Organised, calm under pressure and confident leading busy services
• A hands-on trainer who brings junior chefs on
• Available to start within two weeks
